Pimento Cheese Hushpuppies

Pimento Cheese Hushpuppies
15-20 hushpuppies

1/4 cup All purpose flour
1 cup Yellow cornmeal
2 Tablespoons Sugar
1 teaspoon Baking powder
1/4 teaspoon Baking soda
1/4 teaspoon Salt
1 egg
1/2 cup Buttermilk or sour milk (1/2 cup milk mixed with 1/2 teaspoon lemon juice or vinegar, let sit for 5 min.)
6 oz. Palmetto Cheese, Original or Jalapeno
3 cups Oil (for frying)
1/4 cup Smoked sausage, small diced
1/4 cup Dill pickles, small diced

Bring 3 cups of oil to a temperature of 350 degrees.
In a mixing bowl, add flour, cornmeal, baking powder, baking soda, and salt. Mix all dry ingredients together.
Make a well in the center of the cornmeal mixture. To this, add the egg and buttermilk/sour milk. Stir just until mixed.
Add 6 ounces of Palmetto Cheese, 1/2 tub. Mix just until combined.
Variation: add diced sausage and pickles to the batter and mix until combined. The next step is the same for both variations.

Drop tablespoon sized batter into the hot oil. Be sure to drop the batter as close to the oil as you can to prevent the oil from splashing. Cook until golden brown on both sides. Place on paper towels to soak up the extra oil. If your oil was too hot and the hushpuppies are not thoroughly cooked, place in a 350 degree oven for 10 minutes. Make sure between each batch that you let the oil come back up to temperature.
